Summer dishes - Try our fabulous Coconut Panacotta - Secret recipe revealed!
Something exotic to enjoy with friends on a summer day!

Coconut Panacotta
- 200ml fresh milk
- 300ml Kara coconut cream
- 75g white sugar
- 1 vanilla pod split in half
- 2 ½ sheets gelatin
Place the gelatin sheets in to a small bowl and cover with cold water. Place the remaining ingredients into a sauce pan and slowly bring to a simmer. Remove from the heat and leave to cool for 2-3 minutes. Take the gelatin sheets from the water and add to the warm coconut mixture, stir with a whisk until the gelatin is fully combined. Pour the mixture into 6 5cm by 5cm round moulds and put in the refrigerator to set (it is best to leave the Panacotta over night to set).
Strawberry Soup
- 200ml Strawberry juice
- 100ml Pineapple juice
- 100ml Water
- 100g white sugar
Place all ingredients into a sauce pan and bring to the boil. Remove from the heat, strain and put in the refrigerator to cool.
Raspberry and Mint Salad
- 200g Fresh Raspberries
- 10 Large mint leaves
- 1 Lime
- Icing sugar to taste
Peel and segment the lime, finely dice the lime segments. Cut the raspberries in half. Finely chop the mint. Combine all ingredients. Depending on the time of year the raspberries can be a little sour so add the icing sugar only if needed.
